Never Buy Packaged Deli Meat if You See These 4 Signs of Spoilage

Deli meats are a staple in many diets. While they’re a convenient food to stock in your kitchen, deli meat is highly perishable. This is why it’s important to be aware of signs of spoilage when you’re shopping for these popular protein products. Here are 4 signs of spoilage to watch out for. 

1. Texture Changes 

One of the best ways to tell if a deli meat product might be past its prime is to look for texture changes in the meat. If deli meat has a slimy or sticky texture, there’s a good chance that it’s spoiled. In early stages of spoilage, certain bacteria, such as lactobacillus species, produce bacterial exopolysaccharides (EPS), compounds that form a slimy barrier.

Slime can also form from protein breakdown, which occurs when bacteria on the meat release enzymes that degrade protein. 

2. An “Off” Smell

If your deli meat gives off a foul odor, you shouldn’t purchase or eat it. Bacterial decomposition can cause deli meat to develop a range of odors, such as cheesy, sulfur-like (similar to rotten eggs), sour, or cabbage-like smells.

Fresh deli meat should have a neutral or slightly savory aroma and should be free from strong odors. 

3. Discoloration 

Depending on the type, deli meat can vary in color from deep red to light pink, which is typically a sign of freshness. However, some color changes, such as a green hue, can indicate that the meat is beginning to spoil.

For example, Pseudomonas, a bacterium that commonly causes deli meat spoilage, produces hydrogen sulfide, a gas that reacts with myoglobin, the protein responsible for deli meat’s red or pink color, turning it green.

General dullness and brown or grey spots can also indicate that deli meat has gone bad.  

3. Excess Liquid or Milky Residue in the Package

While a clear and slightly pinkish liquid is normal, deli meat that has a thick, milky liquid collecting in the package has likely gone bad.

The longer a product sits on the grocery store shelf or in your refrigerator, the more liquid will be released from the deli meat's muscle cells.

Though liquid in general is not always a sign of spoilage, a product with discolored or excessive liquid should be thrown away. This is especially true if excess liquid is accompanied by a strong odor or color changes. 

4. Puffed or Bloated Packaging

When meat is contaminated by bacteria, the bacteria break down the sugars and proteins in the meat, producing gases such as hydrogen sulfide and carbon dioxide. 

Excessive gas production leads to something called “blown pack” spoilage, which is characterized by meat packages that puff up with air.

If you come across a pack of deli meat that is puffed up, do not purchase it.

Why Packaged Deli Meat Spoils Faster Than You Think

Many meat products, including deli meat, are highly susceptible to spoilage due to bacterial contamination.

Meat contains high moisture levels and nutrients, such as protein, which create an ideal environment for bacterial growth.

Deli meat can become contaminated during processing, handling, or storage, allowing bacteria to multiply quickly. Because it is highly perishable, it should be stored properly, in the refrigerator at 40 degrees Fahrenheit or below, and consumed before its expiration date.

It’s also important to note that deli meat can be contaminated with bacteria that cause foodborne illness, such as Listeria. Because it is especially prone to bacterial contamination, it is recommended that people with weakened immune systems and pregnant individuals avoid deli meat or cook it to  165 degrees Fahrenheit before eating it to kill harmful bacteria.
